Went to an Italian restaurant in Williamstown on Wednesday. They were selling Carbonara with cream… I mean they’re freaking Italian…
Some places will Australianise their food because it’s what the customers want, or what they think their customers want. I saw on the menu at the local “Italian” place, Abruzzese pizza including ingredients Kalamata olives, feta cheese and Sicilian salami. None of that stuff has any business being on an Abruzzese pizza. I don’t think any of the people working in the place could even tell you where Abruzzo is, let alone having been there or appropriating the cuisine. Carbonara with cream is not carbonara. If you want to eat $4 food out of a can like an animal that’s fine. But it’s not carbonara.
I did have a nice pasta with olive oil, chilli, parmesan cheese and a bit of spring onion. They claimed to have sausage in it as well, but there was nothing, which would annoy me in general, but the dish was nice without it to be fair

Norton St doesnt have an Italian restaurant that does Carbonara properly. Cacio y pepe… forget about it. Leichhardt as Little Italy… forgeddaboutit!
Bar Italia still holds a special place in my heart.

What machine you have?
Ona is extremely expensive. The Raspberry candy is nice, but I find that it’s more of a “once in a while” type of coffees, rather than something you’d have every morning. It blows your mind that a coffee bean can naturally have that type of flavour.
In terms of others, it generally depends on what type of coffee you like. If you want something lighter in flavour, Little Marionette is definitely a good one to try. Single O has a few stronger blends. Alchemy is also a really nice one, as is Mecca. Gumption is a Alchemy blend, but it’s its own coffee (if that makes sense).
Norton St stopped being good about 20 years ago. The only place I might go to on Norton these days, is Grappa, and even then, I find their flavours to be fairly blunt, rather than subtle

Most places do creamy carbonara because its harder to fuck up in a service, and marginally cheaper. Im not even Italian and it really grinds my gears.
I use Sample coffee as my regular for espresso and single origin. Years ago I would have suggested just getting beans from Forsyth’s up the road but the last few times I used them as emergency supply they haven’t been very fresh.
Is it really that hard to make? I do a Carbonara at home, granted with bacon and normal cheese, because i’m not going to spend the money, but i’ve never even once had it split or scramble.
