What sort of BBQ do you have? Gas grill, charcoal, rotisserie or hangi???

Gas Weber with a lid? Chicken thighs go really well, I marinade in garlic, chilli, soy sauce and sherry. The fat content in the thighs means they won’t dry out too much but you have to be a bit careful with them catching fire. The lid helps get the smokey without the charcoal.

I also like to get those cheap end bits of eye fillet that are the odd triangular shape. I cut the fillet really thin, cook the slices very quickly (like less than a minute each side) and then drop them in a bath of olive oil, garlic slivers and parsley like a reverse marinade. Get some good crusty bread rolls, butterfly them open and dunk them in the oil bath. Add your meat and you’re good to go.

Steak yes, but if you fancy a trip to the meat emporium or decent butcher but picanha is pretty easy and cheap, or grab some hangar steaks - salt oil and the novelty of carving meat straight from the grill.
Ive done whole barra on a weber wrapped in foil, or if you are feeling fancy, prosciutto wrapped scallops are pretty fucking tasty.
Racks of beef, lamb, or pork ribs also work easily enough, again may need some foil. Beef short rib a personal favourite.

Damnit now I feel like a steak.

Even, do a taco?

Get some tortillas, grill your tomahawk steak or fish, make just a simple pico de gallo, bbq some corn…

God all the options are looking amazing! I’ll be talking to the wife and I think we’re going to go a different direction. We have a Lebanese BBQ at work that I may borrow and do some kofta, kebabs etc. Just for something different!

Pretty much all recipes will be the same. Garlic, oil, lemon juice. I had good success using a stick blender.

The fresher the garlic the better. I have issues getting it to emulsify when the garlic is past its best.

Although you still end up with a garlicy oil so its not a total disaster.

So I ended up doing lime and garlic prawns (couldn’t do chilli as my parents and mother in law don’t like chilli), New York steaks, pirri pirri wings (for the nephews) and 2 pieces of pork fillet, one with honey soy and the other more Italian style seasoning. Went really well!

Anyone got some good websites etc for recipes a step above Bachelor chow? My previous Sydney place had terrible hotplates, and fresh food in Darwin was non-existent, so I’ve basically forgotten how to cook.

Has a lot of great info including some deep dives into comparisons of techniques.

Recipe Tin Eats is ok for not too complicated stuff.
